Food: Homemade Granola

Peeps, this is something I always thought is a big act, but guess what: it’s not!

You can make a delicious crunchy and healthy granola muesli in just 30 minutes, and it’s gonna last you for.. well as it’s so good.. for not so long haha

No seriously, you can fill a big 1,5 l jar and as I love adding a crunch to nana ice cream or fruit salads or just snack a hand full in between :) my granola does last quite a while.

Feel free to add or replace any nuts or seeds how you like, this is just an idea so you know how much of the ingredients I used to fill one large container:

  • 1 cup of pecans
  • 1/2 cup of almonds
  • 1/2 cup of cashews
  • 3 cups of oats
  • 1/2 cup of coconut flakes
  • 1 cup of pumpkin seeds
  • 1 cup of sunflower seeds
  • 3 tablespoons of coconut oil
  • 3 tablespoons of maple syrup
  • 1 tablespoon of cinnamon

Pulse the pecans and almonds in a food processor for about 30 seconds – just so that they break into smaller pieces. Place them into a large mixing bowl with all dry ingredients, except the cinnamon, and stir together.

Use a sauce pan to melt the coconut oil above medium heat and add the maple syrup and cinnamon. Stir well until a smooth brown liquid forms then pour it all over the dry ingredients and mix well so everything is covered evenly. You will see that it starts sticking together which means it only needs to be baked now – yum!

I used a baking sheet on a tray and spread the mixture as good as possible. Bake at 180 degrees for about 15 minutes. Then stir through so it gets crisp evenly and bake for another 10 minutes. When done allow the granola to cool down before storing in a jar. If you want you can add gojis or other dried berries to your granola now. Enjoy with green smoothie bowls, nana ice cream, any milk or just plane as a snack ? IMG_0987-1
